Oven Fries with Olive Oil, Parsley & Chives ~ Simple, Healthy, Delicious!

Oven Fries with Olive Oil, Parsley and Chives

Method:

Preheat oven to 400 degrees (I do convection-bake)

Line a roasting pan with aluminum foil.

Cut large Idaho Baking Potatoes into wedges (you should have about 8-10 per potato)

Place your potato wedges into the pan and toss well with olive oil (not swimming in olive oil, just well coated.)

Kosher or Sea Salt and Pepper.

Arrange your potato wedges skin side down and bake uncovered in the oven for approximately 23-25 minutes, or until browning, crispy on top but soft in the center.

Gently toss with chopped parsley and chives. Serve.

I have to remember to make oven fries...for some reason, when I'm going to make potatoes, I never think about baked fries and they look SO good.
