Grilled Skirt Steak with Thai Red Chili Sauce & Fresh Thai Basil

IMG_0071.2

While gazing across the butcher counter at Whole Foods yesterday, we came across some beautiful Skirt Steak for $7.99 lb...a decent deal considering the hefty price tag this (what used to be considered modest) cut of meat is demanding now a days.

It seems 10-15 years ago....

...you could pick up Skirt Steak for $3.99 lb...but its tender, juicy, marbled texture ~ perfect for soaking up marinades and best cooked on a screaming hot grill ~ has elevated its status.

Last night we simply salt and peppered the Skirt Steak on both sides, then grilled it quickly over a super hot charcoal grill...(about 3-4 minutes per side). We accompanied the steak with a homemade chimichurri sauce, grilled artichokes, lemon and bread.

Here, I took the leftover Skirt Steak and (craving some heat) whipped up a Thai Red Chili Sauce.  Lightly drizzling the sauce over the top of the meat and finishing it off with fragrant, fresh Thai basil... made a perfect low carb lunch ...before prepping potatoes for dinner!

One of the most affordable and overlooked cuts of meat out there! Phenomenal photos!

I like the sweetened chili sauces, as pure heat Thai style is a little too hot hot hot! for me. :)

Skirt steak and flatiron steak are perhaps not terribly well-known. Good value, great texture and flavor. And I concur, your photos are truly wonderful.

looks wonderful. Great shots, too. Maybe a burgundy with that?

I had it for lunch so I drank good ol H2O...but a Burgundy or Pinot...or a crisp cold beer would be perfect!!! :)

I can still find skirt steak at Mexican markets for that reasonable price, but I have to drive across town to get it ... and with the price of gas and the time it takes :)
Isn't chimichurri sauce just the best? I happen to be making some tonight. That hot sauce looks ... well ... HOT!

Thai seasonings are my favorite or are they Vietnamese. It's a tie. I'm always chicken shrimping my thai food, so I love your beef attack with a great thai sauce that packs a punch. I have bookmarked and will make real soon. Thanks
