Grilled Sardines with Lemon and Herbs ~ Beauty is in the Eye of the Beholder

Fresh sardines.  I think they're beautiful to look at, but then again, I've always had an affinity to fish.

I love the coast.  I love seafood.  Some of my fondest memories are of sitting around the table with my mom, dad, sisters and brother...slurping down clams and feasting on freshly caught flounder.  So when I came across fresh glistening sardines at Whole Foods this weekend (an item they don't always carry) I knew I had to bring a few home.

Rich in omega-3 fatty acids and an excellent source of vitamin D, B12, calcium and protein; sardines are best (in my opinion) when served along super bold flavors. 

In this case, garlic infused olive oil, kosher salt, Meyer lemon zest and grilled Meyer lemons; freshly chopped Italian flat leaf parsley, cilantro, green Sicilian olives and crisp red onion; paired perfectly with the quickly grilled rich and succulent fish!

The sardine's meat flakes right off its bone and can be spread like a "paste" onto a garlic rubbed toasted baguette.  With all these other accompaniments and a crisp Italian white...you'll think you were sitting at a quaint beach side cafe along the coast of Sardinia.

My only regret is that I did not take more photographs of last night's entire spread... a spread that was as equal a feast to the eyes, as it was to the palate.

I basically followed this recipe on Epicurious for Grilled Sardines with Lemon and Herbs.  However, I only used four sardines, sprinkled with kosher salt and was pretty heavy handed with all the other ingredients...lots of chopped olives, lots of fresh parsley and I brushed the sardines with olive oil I infused with freshly chopped garlic. Simple, beautiful food. (At least I think so...  ;)

We eat a lot of sardines here in Greece because they are in abundance! They look delicious with the lemon on top!

I've never had a sardine that didn't come from a can. This looks delicious and I know I'd enjoy it.

Wait, I somehow missed this post and am in love with the photo and the colours. I think there are few things better than grilled sardines and they are so good for you, as you rightly point out. What a lovely dish.
