Steamed Mussels with White Wine, Parsley, Shallots and Butter

IMG_3199

Being a Mother is...

...having your two year old son wake up from his nap and DEMAND sitting on your lap JUST as a bowl of Steamed Mussels with White Wine, Parsley, Shallots and Butter is placed RIGHT smack in front of you!

"Motherhood is all about sacrifice..." I thought to myself...

My son's warm little body the only thing keeping me from direct gorging access to these beauties...as we sat across the table from my husband and sweetheart angel of a daughter ...it dawned on me...

I wouldn't have it any other way!

...though his chomping away on my warm, crusty bread was clearly almost a deal breaker! (not gonna lie...)

The Bobby Flay recipe can be found here on: foodnetwork.com

Our only changes...doubled the garlic, doubled the shallot, doubled the butter at the end...and used fresh parsley instead of tarragon. (The leftover mussels and broth seen below in a carafe will be served over angel hair pasta this evening!)

I'm sure when you finally got to dig in, it was worth the wait! My, oh, my...these look amazing. I don't typically crave mussels at 7:30am, but these are calling my name!
(Hope your little one is feeling better.)

I've never made mussels because, I hate to admit, they're not my favorite. I want to love them, I really, really do-- all that butter and shallot jazz is totally up my alley! And Belgium is known for their mussels, so I feel like a fraud :) But hey, if you invite me over, just make sure I get that crusty bread and the carafe of butter sauce and we're good to go!!
