Leftover Pork Tenderloin ~ Cuban Sandwiches and Bar-B-Que Pork for Later!

I know some of you are wondering...what is up with this girl ALL OF A SUDDEN posting almost every single day?!

Three things...

1.)  I'm finding it very difficult not to cook or eat anything without documenting it here.  If I fry an egg...I grab my camera to show the world (...or you)...and for that... I am sorry (and currently seeking help... but not really.)

2.)  I'm not working  (at least at a job where I make any money) so this is what, "I LOVE to do."  The kids are young so today... I'm home bound.  Clearly someday the blog posts will subside and perhaps I'll be back to the daily grind ~ until then ~ here's what I ate for lunch.  You are SO lucky! ;)

3.)  To my loyal readers and commenters...please don't feel pressure to comment on all of my posts.  I understand everyone is busy and viewing my leftover pork tenderloin does not take precedence in your daily life (EVER)!  Just know as a busy mom, wife, blogger and "juggling extraordinaire" (just checking who's still reading...I can juggle...3 items total and I'm really, reeeeally good) ...I understand, love and appreciate you always!

(Here's the rest of the pork tenderloin that I placed in Ziploc bags and mixed in a whole bottle of Jack Daniel's Hickory Brown Sugar Bar-B-Que Sauce.  The bags are in the freezer waiting to be thawed and reheated for Bar-B-Que pork sandwiches this weekend!)

So there you have it...two ideas for when you have a TON of leftover pork tenderloin! 

While I'm not "rocking the culinary world" with this post...maybe someday, someone, somewhere will stumble upon it and know exactly what they want to do with their leftover pork... 

...and sadly my friends.... that makes me sleep better at night.

Oh Cuban, my Cuban, how I love you so! This looks sooooo yummy. Nice usage of the inverted hot dog roll. Use whatcha got: a girl after my own heart.

You are an amazing juggler by the way! I can't get into the kitchen some nights and all I'm juggling is a job, a boyfriend, and three cats :) You rock girl!!! And the Cuban looks DELICIOUS!!!

I wish I had your drive when it comes to blogging...I'm just plain lazy! The Cuban looks great...I do my best not to have leftovers, but if we do the dogs usually get them.

The sandwich is beautiful. My leftovers generally get eaten for breakfast the next day. Invariably, someone blurts out, "That's not breakfast food!"

I always laugh and keep eating.

Marc -We made 4 small to medium pork tenderloins...we knew we were making way too much but thought we should just cook it all up.

Clint - I usually say listen to Cindy because she is always right as she is the woman...but I eat leftovers for breakfast all the time too! :)

I don't even love roasted pork loin, but I make it JUST to freeze the leftovers for Cubanos!!! Yours look so good... next time, try it with sweet Hawaiian rolls. You will never go back :) And PS- I think your next career is a food stylist :)

Usually my left overs do not turn out as tasty as yours.
Now:
1) who says being a full time mom isn't a job? It is exhausting and I consider my time in the office time off.
2) I leave comments when something in the post triggers a response in me, so it is entirely your fault if I respond too often! hehe
3) sorry about the comment repeated a million times yesterday, something must have gone haywire

You make me laugh so I will happily read your daily posts! Plus, there's amazing photos and food. Not a bad combo! (And really, it's pretty incredible that you can find time to post so often...I don't have kids and I struggle to post a couple times a week. I'm very impressed and slightly jealous! ha)
Turning the hot dog bun inside out to fry it is genius, by the way. I've never thought of that. Definitely going to use that one.

I love leftovers. I always try to make a big meal Sunday so that I don't have to cook anything after a hard, draining Monday. The Cuban looks great, BTW!

I cook so I will have leftovers. I love to have part of the work done, so I can put together a meal even when I am busy.
