Summer Turnip Bruschetta

I came across these beautiful Summer Turnips at our Farmer's Market yesterday....

After much debate over what to do with them, I settled on a Summer Turnip Bruschetta

Their beautiful mushroom color bulb reminded me of...


White Truffle Oil and freshly sliced Parmigiano Reggiano.

Throw in some fresh basil, chives and a pinch of salt to taste...

Even add some of the turnip greens if you'd like...

Served atop toasted baguette slices, lightly brushed with garlic...

And you have a fresh and delicious, healthy summer treat!  The basic recipe follows...Enjoy!

Summer Turnip Bruschetta

A few handfuls summer turnips, washed and diced
A handful of summer turnip greens, diced (optional)
A handful fresh basil, chopped
A handful fresh chives, chopped
1/8-1/4 teaspoon White Truffle Oil
1/4 cup shaved Parmigiano Reggiano
Kosher salt to taste, about a pinch
Buttered and toasted baguette slices, lightly brushed with fresh garlic clove right out of the oven

Directions:

Mix the first seven ingredients together until well combined. Serve atop the toasted garlic baguette slices.

I can only imagine how delicious this is. What is it about the combination of truffle oil and parmigiano reggiano? It's heaven, really!

Tragically enough, I've never seen summer turnips before. but I'm always looking for new bruschettas! This one sounds delicious!

I don't think I've ever had a turnip! I always see them at the market...this needs to change!
What a fun way to use this ingredient...sounds so fresh.
