Spicy Sesame Noodles with Chopped Peanuts and Fresh Thai Basil

It's been almost a week since my last post. We were away for a few days with family...enjoying the beach, Scrabble, cocktails and each other's company. (For the record..."BOTOXED" and "QUILTER" are in fact words...high scoring ones at that...just sayin')

Anyway... we returned home to this...

Thai Basil Gone Wild!

So...despite my stern proclamation on the car ride home, "No carbs for me for a week...!"  ...thirty minutes in the door I was preparing, Spicy Sesame Noodles with Chopped Peanuts and Fresh Thai Basil.

I followed the recipe exactly, except for (and this is major) halving the amount of Angel Hair Pasta to 1/2 pound and used brown sugar in the dressing instead of regular white. (*also used unsalted peanuts and a low sodium soy sauce)

I thought a pound of pasta seemed way too much for the amount of dressing the recipe yielded ...other reviewers agreed...1/2 a pound of pasta worked perfectly!

Also...MAKE THE PORK TENDERLOIN with it! SOOOOOO GOOD!!! It's a once a week meal sort of thing!
