Fried Eggplant

AND WITH THE LEFTOVER FREID EGGPLANT...WHY NOT TRY THESE, Fried Eggplant Pizzas with San Marzano Tomatoes and Marinated Fresh Mozzarella!

Fried Eggplant

Slice the eggplant 1/4 inch thick

Place eggplant slices in a shallow bowl filled with AP Flour (go ahead and add some spices if would like, for instance garlic powder, cayenne pepper, kosher salt and pepper) shake off excess flour

Dredge the floured eggplant slices in beaten egg

Next, place your eggplant slices in panko and press the panko onto the eggplant slices until fully covered

Place panko covered eggplant on a clean flat surface while you heat your oil

Heat vegetable oil (about 1-2 inches deep) to 360-370 degrees

Carefully fry the eggplant slices (I did two at a time) until golden brown. You'll have to flip them once or twice.

Drain your fried eggplant slices on paper towels or a brown paper bag. Season w/salt and pepper.

Serve Fried Eggplant with your favorite marinara sauce or ranch dressing.

Not rocket science, but you've got the knack for the photography and presentation too! Looks so tasty. How do you do it?

I am opposed to the deep fry. I wonder if a bit of baking of the eggplant and then a quick shallow fry in very hot oil would work.

In the Middle East people love eggplant; I grew up hating them and now I can't have enough of them! Frying them is delicious (the hell with the calories!) as well as roasting them and grilling them~

Wow, this is some good looking eggplant - hard to make fried food look fresh and eat-off-the-screen good. And if one is going to fry, best that it's vegetables. I might give this one a whirl with my abundant zucchini.
