Fried Eggplant Pizzas with San Marzano Tomatoes and Marinated Fresh Mozzarella ~ Leftovers

I can not resist taking pictures of food. We had few pieces of leftover FRIED EGGPLANT from yesterday...so for today's lunch we enjoyed these delicious Fried Eggplant Pizzas with San Marzano Tomatoes and Marinated Fresh Mozzarella.

Akin to Eggplant Parmesan and proof that often...

Leftovers are better than the original meal!


Fried Eggplant Pizzas with San Marzano Tomatoes and Marinated Fresh Mozzarella ~ Leftovers

Marinate fresh mozzarella in a touch of olive oil, fresh chopped herbs, lemon zest...a pinch of salt and pepper.

Preheat your oven to 375.

Place your leftover FRIED EGGPLANT in a pan or on a sheet of aluminum foil

Top your fried eggplant with your marinated mozzarella and a bit of red sauce if you wish (shown here San Marzano petite diced tomatoes)

Heat in the oven until the cheese is melted and the eggplant is crispy and hot...

Enjoy...!

Enjoy indeed! That is the best looking, and I'm sure tasting, eggplant parmigiana I've ever seen! And please don't stop taking pictures of food, you're SO SO SO good at it, I strive to be as photographic as you :) And that's the truth!

How come our leftovers don't look as fabulous as yours? It looks more like the fab pizza takeaway we order. Great idea, will have to do this at home.
